I'm trying Chicken Tikka Masala tonight (never made it before, but keep hearing how delicious it is), and in my search for a recipe I came across
this instructional video. Oh my goodness, this guy cracks me up! The way he mixes the ingredients, the "boom boom boom", the skewer! What a happy cook. He just made my morning. Enjoy!

When my brother saw my newborn son, his first comment was that my son looked like this chef. So Uncle was always trying to teach my baby to say "Boom!" and other sayings from the chef! -Laura
Next time I'll follow the link first with the "boom boom boom" I thought it was going to be Emeril (that was who my baby resembled.) Anyway, neat to learn about the chef and glad someone's cooking a good meal tonight. My stove died and while I research new stoves we are eating microwave/crock pot/ waffle iron dinners of weirdness. - Laura
Try this easy Indian recipe too! (My husband requests it for his birthday dinner and I make naan, basmati rice, and a potato and butternut squash curry to go with it.)
2 Tbsp oil
1 large onion, chopped
1/2 tsp ground turmeric
1/2 tsp ground cumin
1 hot red pepper (or 1/2 tsp red pepper flakes, more if you like your food spicy)
1 bay leaf
1 Cup red lentils (usually in Mediterranean/Indian section of grocery store)
3/4 tsp salt
1 tsp sugar
2 Cups warm water
2 Cups zucchini, shredded and extra water squeezed out
Heat oil in large saucepan. Add: onion, turmeric, cumin, red pepper, and bay leaf. Fry for 1-2 minutes.
Add: lentils, salt, sugar, and water. Bring to a boil. Reduce heat, cover, and simmer for 7-15 minutes (less for more tender lentils).
Add zucchini and stir to mix. Return to a boil and cook, covered and stirring occasionally, until water is absorbed and lentils and zucchini are tender. Serve hot over basmati or white rice, preferably with naan or chapati.
